I don’t know about you, but I have always loved cereal! I love the flavor, I love that it’s so simple, and I just love a cereal moment. 🙂 When I started changing my eating habits about 7 years ago, cereal became more challenging. Most cereals are heavily processed with all the nasties in them: gluten, sugar, dirty dairy, preservative, colorings, etc. And then it’s typical to pour some ice cold antibiotic infused, luekemia virus infected, artificial hormone boasting, puss filled milk on top. HA! I thought you’d like that description 🙂 Truth is truth yo!
So my cereal meals look a bit different now but are just as tasty if not more so! Here is my exclusive granola recipe just for my friends- SUPER easy, SUPER delicious, & SUPER nutritious!
Superfood Granola
4 c. Gluten-Free Oats OR Quinoa Flakes
1 c. Organic Coconut flakes
1/2 c. sliced almonds
1/2 c. mulberries, goldenberries, (or other dried fruit)
1/4 c. cacao nibs
1 tbs. Cinnamon
1/2 tsp Himalayan Salt
1 tbs. Maca powder (optional)
1/2 c. Extra Virgin Coconut oil
1/4 c- 1/2 c. Coconut Nectar
1/2 tsp Baking Soda
1tbs. Organic Vanilla Extract
Preheat oven to 350 F.
1. Mix all dry ingredients in large bowl except baking soda.
2. Combined coconut oil & coconut nectar in small saucepan over medium until combined and beginning to boil. Turn heat to low and add in baking soda. It will begin to bubble. Remove from heat. and stir until completely combined. Add in vanilla and stir.
3. Add in liquid mixture to dry mixture until completely combined. Spread out over parchment paper covered large baking sheet. Bake for 8-10 minutes until light golden brown. *
4. Remove from oven and allow to cool on counter top. Granola will harden.
*You can also dehydrate instead of baking for a raw granola.
Enjoy with Coconut-Walnut milk!

You totally rock and I am so grossed out by your milk (ha!) but you were going for that – I don’t use cow milk anyway! Can’t wait to try your cereal as I don’t eat gluten-either. Yes another great choice for us non-gluten eaters that is yummy Im sure. Gorgeous photo too. Thanks Jessica!
I meant “your milk comment” (not YOUR milk)- I know that that isn’t your milk. Gotta try with coconut-water milk like you do!

I love this recipe and I love quinoa flakes! I am definitely going try this. My favorite is quinoa flakes with cooked persimmon.
