
Our reset in a crunch plan for week two was:

For Breakfast we picked:
- Fresh fruit plate. Our choices for fruits: strawberries, blueberries, blackberries, raspberries, cantaloupe, honeydew melon nectarines and peaches
For lunch and dinner we could alternate recipes this week: meaning we can make extra for dinner one night and eat if for lunch-SCORE!!
- Hearty vegetable miso soup with microgreen green salad, toasted pumpkin seeds.
- Quinoa-Lentil pilaf with half cup steamed broccoli (we swapped the broccoli out for mixed vegies)
- Pinto beans and rice with steamed zucchini and green beans
Snack: ½ a green apple with almond butter
Day 8 (Tuesday) 
I was super excited to try the Detox powder after having that power greens powder (which my husband likened to horse poop) all week last week. Too bad we are not rid of the power greens just yet!
Ya…my excitement was turned into gagging the first time I tried it. OMG I’d rather have the power greens three times a day than this stuff!! I have even tried it in warm water and it is equally gross. But Hubs likes it so I guess it’s just a personal preference.
I’d like to point out this caddy that comes with the ultimate reset kit. It is so handy to carry all the packets of powders and the optimize pills that we have to take throughout the day. I even take the mineralize with me so I can add it to the bottle of water everytime I get a new bottle- I think I go through about 5 bottles or 2 1 liter bottles each day!

Since breakfast was a plate full of fruit, I was actually hungry before lunch time came around. I made a note to drink even more water tomorrow so I could feel filled up.
Lunch was microgreen salad with pumpkin seeds and ¼ of an avocado and pinto beans and rice. Let me tell you something, this Indian girl was dancing with joy because I get to have cumin and coriander with the beans!! I miss Indian food and the spices and flavor!
And even better- dinner was Quinoa-Lentil Pilaf and it had turmeric in it!! Now we are talking. This was so good that our ten year old kidlet asked to take it to lunch the next day!
Hubby – I was doing pretty good days 8 through 10. I was determined to continue with this process to see if anything improved for me. The food was getting a little old around day 10 & 11, but I noticed that my joint pain in my hands, shoulders, knees and especially feet was considerably less. On day 12 I stopped taking pain meds. I also notice my over all energy level was up. Typically around early evening I could easily fall asleep in a chair if I sat still for more than 5 minutes. I have had blood test and sleep studies to try and find the cause for my lack of energy. I really think that I am gluten sensitive. Meaning I have some of the standard side effects of having a mild reaction to gluten. By day fourteen, I was sure that gluten has affected me for years. I can remember about 12 years ago going to arthritis specialists because I could barely make a fist or hold tightly on to my fishing rod (that is a huge problem for me). Now with two weeks of being on the Ultimate Reset and going gluten free, I know that I will stay away from it from now on.

Day 9 and Day 10
These two days are a blur since I was in a training both days an hour away from home. I did notice that I got hungry and thirsty more often. I was not drinking enough water and people at the
training would give me strange looks as I swirled my detox powder and power greens in Styrofoam cups to mix and down it as fast as I possibly could! So my meals were on the go and prepped the night before. My energy was crazy! I could work all day, come home and do housework and get assignments done (remember I’m in Grad School?!), wake up and do it all over again!
AND this is the last week of duck hunting so hubby took the whole week off!! I’m so excited, not because he’s off but it’s the last week for me as a water fowlers widow 🙂 . Haha…
This was Breakfast on the go for him- again proving you can do this no matter where you are or what you are doing!
I also wanted to show y’all a picture of my miso soup! Seriously I’m in love with this thing. Hubby is not a big fan but this was dinner on Day 9!

Day 11- Friday
On usual weeks, by Friday I am done. My brain is foggy, I don’t feel like going to work and just want to call in sick! Not this Friday. I woke up with an abundance of energy, worked like crazy all day, came home, took the kidlet shopping and dropped her off to a sleepover and then decided to make something other than what we had in our plans for this week. Hubby had made a couple of remarks as this week went by that he was tired of eating the same things so I opened the ultimate reset book and tried to see if I can mix and match or make something else for him! There’s a recipe for Kabocha Sqaush with garlic Tahini filling and steamed broccoli or your favorite vegetable. I surveyed the kitchen and saw a spaghetti squash laying on the counter- close enough!
Plus, we both are not big fans of broccoli! There was no Tahini sauce at home, but I had a jar full of white sesame seeds! So… I was resourceful! I roasted them and then went all frontier woman and grinded them on the stone grinder (all Indian homes have one of those for grinding spices and I’d rather use that than the electric one because it’s easier to clean 🙂 ). I’m telling you the energy high is great! I feel like I used to when I was in my 20’s!

I filled the spaghetti squash with the tahini sauce, garlic and miso paste like the recipe asks and placed tomatoes in the middle and baked for 30 minutes! The end result was so delish- definitely a recipe we are keeping. As hubby was scarfing this down he comments, “This would be a great side dish with chicken.” LOL we really do miss chicken since it is one of the few meats we eat.
Day 12 and 13 (Weekend)
Before we started the Ultimate Reset, I used to wake up about 6-7 times a night to go pee. Almost two weeks into this I have noticed a significant change, I only wake up once a night or some nights not at all!! This makes a big difference to me since I have insomnia and waking 6-7 times a night was really giving me very little sleep. In the past, I had all sorts of tests done but no one could ever find anything physically wrong with me. What I think I figured out is that I didn’t drink enough water throughout the day, feeling dehydrated by 4 -5 pm and was chugging water like crazy in the afternoon and therefore peeing all night. Simple thing right- but ultimate reset made me realize how to change this habit and routine.
Weekends are usually hard since I always have visitors over and I’m always cooking massive amounts of Indian food. This weekend my Dad was going to be here so it was extra hard. I made dhal (Indian lentil soup- key ingredients, turmeric, cumin, spinach, carrots and of course lentils!) and rice (brown for us) and some salmon (cooked Indian way), but hubby and I stuck to dhal and brown rice- so good.
Day 14
Still lots of energy and I feel like we are in a routine now. Food wise we didn’t really do anything new. All prepped to start Week 3 tomorrow!!
WEEK 3

- Curried cauliflower (Yay- this is a Indian dish which I totally know how to cook!!)
Snack : ½ a green apple with almond butter (yeah we are creatures of habit)
I’m so glad I don’t have to drink that Detox powder. This week we had to add another set of capsules called Optimize!! No worries, we got this.
Day 15-21
Murphy strikes again. This week I had to be out of the office for three days due to a big contact investigation ( I work in infectious diseases). Being out in the field, I missed meals and water and felt tired and dehydrated. I still took all the supplements like I needed to but with so little intake of calories I wasn’t keeping up.
My breaking point came at Day 19 when I had to travel two hours away from home for a training that I had completely forgotten about! I wouldn’t even have made it if not for my outlook calendar. Since I was expecting to come home for lunch, and had to leave last minute, day 19 was the first day I broke away from the ultimate reset and ate regular food- which consisted of salad and a sandwich and potato salad (the yogurt in the pic is not mine).

I felt like such a failure and texted my hubby about this.

He made me realize that through this process, we DID learn new things about our bodies! My husband learned that his body did not tolerate gluten. After having years of pain in his joints, countless sleep studies, and x-rays confirming Arthritis, he is now 90 % pain free (he does need to have surgery on his knees and shoulders due to old football injuries)! I learned that I need to drink water throughout the day in order to not wake up 6-7 times to run to the bathroom at night (Previously, I was drinking the bulk of my water in the evenings and dehydrating myself all day)! Also something I had been to multiple doctor’s about and had tests done on…who would have thought it could be so simple?! We both also learned new recipes that we are keeping and to incorporate more vegetables into our diet.
HUBBY – (Days 15-21) I am still feeling a million times better with the joint pain. I’ve taken maybe a couple extra strength Tylenol over the 3 weeks of the Ultimate Reset. Before this program I was using daily low level pain meds throughout the day, pain cream, and Extra-Strength Tylenol. I am getting tired of the food though. By the third week my appetite was growing. Eating almost a vegan diet with limiting portions was starting to be too much. I am thrilled though that I met my goal of discovering the reason behind my years of consistent pain! I started easing back towards normal food prepared and cooked like the foods in the reset. I had some chicken around day 18 and some chicken salad on day 19. I didn’t work out the numbers but I would be willing to bet the max calories for a day would barely get to 1000. That is too low for me. I started at a hair less than 232lbs and ended up 215.2 pounds on day 18. That is almost 17 lbs in 18 days. It was not my goal to lose weight. I really feel good between 222 and 225 and I felt considerably weaker with no stamina. I increased my calories and slowly increased my chicken, nuts and peanut butter.
I would strongly encourage friends and family to try the 21-day Ultimate Reset. I would advise to have specific goals in mind and track your progress. Don’t feel like you failed because you slightly veered off course, understand that to get the best results you should stay on track though. Give yourself a fair chance to be successful and work towards your goal.
A month after reset: We are still keeping at eating healthy, Chris has separate bread, bagels, and tortillas in the refrigerator that are all gluten-free. We are still keeping our energy levels up! Good thing because we have added another responsibility to our list of being full-time employees, parents, and part-time students…WITH 7 PUPPIES!!!

WOW! How amazing is that, right?! It blows me away how much of a MASSIVE difference this couple saw in their 21 day journey! Could you imagine living for YEARS with chronic pain and inflammation…going to multiple arthritis specialists thinking you were one of the “unlucky” ones to get Arthritis at such a young age…and then to take a leap of faith and do this crazy program your wife wants you to do with her for 3 weeks, and 2 weeks in to be 90% FREE OF PAIN and off your pain pill for the first time in YEARS?! I mean THAT is life changing people!!!!
What about Suzie and her insane energy levels!! I know this woman personally and let me tell you…she is the BUSIEST person I know…working full time in an extremely hectic environment, full time mommy to a very involved little girl, part time college professor, AND going to school to get her Masters PLUS now PUPPIES!!! That doesn’t include the daily things that come up with bills, shopping, meal planning, cooking, cleaning, homework, and being a WIFE! I don’t know how she does it… It was so rad to see how her energy soared through this program!
