Ingredients

  • 12 Medium Organic Free-Range Eggs (Hard Boiled)
  • 1/4 cup Organic Soy-Free Vegan Mayonnaise OR Homemade Mayo
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon Himalayan Salt
  • 1 pinch Black pepper
  • 2 tablespoons Organic extra virgin olive oil
  • Paprika
  • 1 teaspoon Tumeric
  • 1 Medium Organic Carrot
  • 5 Organic black olives
  • 12 Medium Organic Free-Range Eggs (Hard Boiled)
  • 1/4 cup Organic Soy-Free Vegan Mayonnaise OR Homemade Mayo
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon Himalayan Salt
  • 1 pinch Black pepper
  • 2 tablespoons Organic extra virgin olive oil
  • Paprika
  • 1 teaspoon Tumeric
  • 1 Medium Organic Carrot
  • 5 Organic black olives

Note

The addition of tumeric, takes these super cute deviled eggs and makes them a superfood! It also has less mayo than the average deviled egg, slashing the bad fats & calories, and has the option of being completely dairy-free!

Directions

Cut the Eggs
Step 1
Peel your hard boiled eggs, being careful not to break the whites. Once peeled, cut your eggs 2/3 of the way up, leaving a smaller top half to be the hat of the eggs chickies. Depending on the size of your eggs, it may be easier to cut them horizontally, either way works fine. Remove yokes and place in a separate bowl.

It is easier to use a food processor or blender to make the filling smooth and creamy, but it is not necessary. In either your food processor or in a large bowl, combine the remaining ingredients except the paprika. Blend together until creamy. You can add salt and pepper to taste.

Assemble the eggs

If you have a cupcake pan, it makes it much easier to make these chickies. Simply place the bottom halves of the egg whites in the cupcake tin to keep them upright. You can either use a pastry bag for the filling, or put all the filling in a ziplock bag and cut a small-medium hole in the corner so you can squeeze out the filling into each egg. Fill the eggs with filling, giving yourself enough room to make their little faces. Once all eggs are filled, add on the smaller piece of egg white on top of the filling, making a little hat.
