These stuffed mushrooms are delicious and spiked with potent superfoods like tumeric, coconut oil, & spinach to take the nutrition up another level.
Ingredients
- 12 Mushrooms (Stems removed and washed. Save stems. )
- 3 cloves Garlic (Minced)
- 1 Onion (Diced)
- 4 cups Fresh baby spinach
- 1/4 cup Daiya Vegan Cheese (Or other raw shredded chease)
- 2 tablespoons Organic Coconut Oil
- 1/2 cup Almond meal
- 1/2 teaspoon Tumeric
- 1/4 cup Sundried tomatoes (Diced)
Directions
Step 1

Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside. |
Step 2

Mince mushroom stems really fine. |
Step 3

Cook spinach over medium heat in a medium size skillet about 2-3 minutes, until it wilts. Remove from pan, squeeze out extra liquid, and mince. |
Step 4

Add coconut oil to medium skillet and brown garlic & onion. Add your minced mushroom stems and cook until light brown. |
Step 5

Remove pan from heat and add spinach, sundried tomatoes, almond meal, cheese, tumeric, salt & pepper to finalize your filling. |
Step 6

Fill each mushroom cap with filling mixture, slightly rounding off the tops. |
Step 7

Bake 20 minutes, or until golden brown. Enjoy warm 🙂 |
