These stuffed mushrooms are delicious and spiked with potent superfoods like tumeric, coconut oil, & spinach to take the nutrition up another level.

Ingredients

  • 12 Mushrooms (Stems removed and washed. Save stems. )
  • 3 cloves Garlic (Minced)
  • 1 Onion (Diced)
  • 4 cups Fresh baby spinach
  • 1/4 cup Daiya Vegan Cheese (Or other raw shredded chease)
  • 2 tablespoons Organic Coconut Oil
  • 1/2 cup Almond meal
  • 1/2 teaspoon Tumeric
  • 1/4 cup Sundried tomatoes (Diced)

Directions

Step 1
Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
Step 2
Mince mushroom stems really fine.
Step 3
Cook spinach over medium heat in a medium size skillet about 2-3 minutes, until it wilts. Remove from pan, squeeze out extra liquid, and mince.
Step 4
Add coconut oil to medium skillet and brown garlic & onion. Add your minced mushroom stems and cook until light brown.
Step 5
Remove pan from heat and add spinach, sundried tomatoes, almond meal, cheese, tumeric, salt & pepper to finalize your filling.
Step 6
Fill each mushroom cap with filling mixture, slightly rounding off the tops.
Step 7
Bake 20 minutes, or until golden brown. Enjoy warm 🙂
