The Breakfast Sandwich.

Hey!!!

I wanted to share this scrumptious and easy breakfast sandwich with you! This was my breakfast this morning before a looooooong day. It is filling, delicious, & nutritious!!

1. Heat up 1 tbs coconut oil in a pan. When melted, place 1 slice of *organic* turkey in the coconut oil on one side of the pan and crack an organic egg on the other side. Flip when necessary to evenly cook both sides of turkey slice and egg.

2. While egg and turkey are cooking, slice a gluten-free english muffin in half and put in toaster.

3. When english muffin is done, spread coconut oil on each side, add avocado slices, thinly sliced raw cheese, cooked turkey slice, and egg. Sprinkle with Himalayan salt.

4. Cut sandwich in half if desired. Add a side of sauerkraut with sandwich to start off the morning with some enzymes & probiotics.

5. If desired, drink with good-belly juice and/or inner-eco. Recommended to eat while reading some inspiring literature such as a devotional or your favorite book in the Bible to start off the day strong!

Spring Cleaning: Body Edition


People like “stuff”. We tend to hold onto more of it year after year. We save and stock up on many useless items that we don’t even know what to do with. Maybe we keep things because they hold precious memories of days gone by, or they remind us of our parents, grandparents, past loves or childhood. To part with these precious possessions may seem painful or even out of the question to some. There is a saying that goes, “You have to get rid of the old to make way for the new.” If you are feeling stuck or stagnant in your life, try some spring-cleaning. Throw out some of that old “stuff”, say goodbye to your nuances of the past and welcome the new energy of your happy, healthy future. Try these four ideas:

1. For good mental and physical health, we actually have two “houses” that need to be spring-cleaned: our physical homes and our physical bodies. Just as we accumulate “stuff” in the form of outgrown clothes, magazines, rusty bicycles, tools and random keepsakes, so do our bodies accumulate old food residues and toxins that need to be cleaned out.

2. To spring clean your body, give it a break from rich and complicated foods by either cleansing or fasting for a short period of time. Cleansing means paring down your food to just simple fruits and vegetables, lots of water and perhaps gluten-free whole grains. Fasting means limiting most foods and drinking lots of water, fresh vegetable and fruit juices, teas and soups. Without much energy going toward digestion, more energy is available to the rest of your body and mind. Cleansing and fasting can sharpen your concentration, help you gain insight and promote spiritual awareness. It can also bring improved immune function and better digestion.

3. While you’re cleaning out your body and home, don’t forget to spring-clean your heart. Throw away negative thoughts and habits you’ve been harboring that no longer serve you. A clean, open heart will allow you to receive all the good that awaits you each and every day. If your heart and mind are cluttered, there is no room for life’s gifts and surprises to enter.

Food Focus: Greens


Leafy greens are some of the easiest and most beneficial vegetables to incorporate into your daily routine. Densely packed with energy and nutrients, they grow upward to the sky, absorbing the sun’s light while producing oxygen. Members of this royal green family include kale, collard greens, Swiss chard, mustard greens, arugula, dandelion greens, broccoli rabe, watercress, beet greens, bok choy, napa cabbage, green cabbage, spinach and broccoli.

How do greens benefit our bodies? They are very high in calcium, magnesium, iron, potassium, phosphorous and zinc, and are a powerhouse for vitamins A, C, E and K. They are crammed full of fiber, folic acid, chlorophyll and many other micronutrients and phytochemicals. Their color is associated with spring, which is a time to renew and refresh vital energy. In traditional Chinese medicine, the color green is related to the liver, emotional stability, and creativity. Greens aid in purifying the blood, strengthening the immune system, improving liver, gall bladder, and kidney function, fighting depression, clearing congestion, improving circulation and keeping your skin clear and blemish free.
Leafy greens are the vegetables most missing from the American diet, and many of us never learned how to prepare them. Start with the very simple recipe below. Then each time you go to the market, pick up a new green to try. Soon you’ll find your favorite greens and wonder how you ever lived without them.


Shiitake and Kale

Prep Time: 2 minutes
Cooking Time: 10 minutes
Yield: 4 servings

Ingredients:
1/2 pound shiitake mushrooms
1 tablespoon coconut oil
1-2 cloves crushed garlic
1 bunch kale, chopped
pinch of salt

Directions:
1. Warm oil in pan on medium heat with minced garlic until aromas of garlic are released, about 2-3 minutes.
2. Add chopped shiitake mushrooms, stir-fry for 5 minutes.
Add chopped kale, stir-fry for a couple of minutes.
Add a splash of water and pinch of salt to pan, cover and let steam for 4 minutes.

Kale, Lemon, apple Green Smoothie
2 leaves kale
1 apple
1 lemon peel removed
1-2 cups water or cold calli tea
Stevia to sweeten
Ice (optional)

Blend all ingredients and enjoy!

Fennel Root, Pumpkin, & Tempeh

 

IMG_1192My lunch today was just too tasty not to share with my favorite people. 🙂 I’ve been trying to vegetables, new spices, & new combinations. I can honestly say I have never eaten this combination before today. I LOVE trying new delicious foods! I hope you enjoy this one as much as I did!

INGREDIENTS

  • 1/2 Fennel Root thinly sliced
  • 1/8 small pumpkin thinly sliced seeds removed
  • 1/3 block Tempeh thinly sliced and cut in half
  • 2 tbs. Coconut oil
  • Himalayan Salt
  • Shredded raw cheese (optional)

This is a SUPER simple recipe. Heat coconut oil over medium-high heat in a medium-sized pan then place fennel, pumpkin, & tempeh in pan. Cover and let cook for about 3 minutes, then stir. Cook mixture until browned. Sprinkle with salt and if desired sprinkle with cheese (raw cheese or Daiya cheese).

This entire meal will take you about 10 minutes all together to make. It’s super delicious! Let me know how you like it by leaving me a comment below!

Health benefits of fennel bulb

  • Fennel bulb is a versatile vegetable, used since ancient times for its nutritional and medicinal properties. This winter season has some noteworthy essential oils, flavonoid anti-oxidants, minerals, and vitamins that have known health benefits.IMG_1191
  • Bulb fennel is one of very low calorie vegetables. 100 g bulb provides just 31 calories. Further, it contains generous amounts of fiber (3.1 g/100 g or 8% of RDI), very little fat and zero cholesterol.
  • Fresh bulbs give sweet anise-like flavor. Much of it is due to high concentration of aromatic essential oils like anethole, estragole, and fenchone (fenchyl acetate). Anethole has been found to have anti-fungal and anti-bacterial properties.
  • The bulbs have moderate amounts of minerals and vitamins that are essential for optimum health. Their juicy fronds indeed contain several vital vitamins such as pantothenic acid, pyridoxine (vitamin B-6), folic acid, niacin, riboflavin, and thiamin in small but healthy proportions. 100 g fresh bulbs provide 27 µg of folates. Folic acid is essential for DNA synthesis and cell division. Their adequate levels in the diet during pregnancy can help prevent neural tube defects in the newborn babies.
  • In addition, fennel bulb contains an average amount of water-soluble vitamin, vitamin-C. 100 g of fresh bulbs provide 12 mg or 20% of vitamin C. Vitamin C helps the body develop resistance against infectious agents and scavenge harmful, pro-inflammatory free radicals. Further, it has small amounts of vitamin A.
  • The bulbs have very good levels of heart-friendly electrolyte potassium. 100 g provides 414 mg or 9% of daily-recommended levels. It is an important electrolyte inside the cell. Potassium helps reduce blood pressure and rate of heartbeats by countering effects of sodium. Fennel also contains small amounts of minerals such as copper, iron, calcium, magnesium, manganese, zinc, and selenium.
